Samgyetang is a whole young chicken stuffed with sticky rice, garlic and ginseng, simmered until the meat falls off the bone, and this restaurant near Gyeongbokgung has been serving the dish for decades. The dining rooms are a warren of old-house spaces, and the menu lists the original ginseng version and a few variations in English. The broth is mild, so add salt and pepper at the table to taste, and use the side of kimchi to balance the richness.
It is traditionally eaten on hot days, but the queue exists year-round. Turnover is quick. Prices and hours may change, and a few seats are reserved for groups.
