Nakgopsae, a combination of nakji (small octopus), gopchang (beef intestines) and saeu (shrimp), is a Busan invention, and this restaurant is one of its best-known names. The stir-fry arrives bubbling in a red sauce, and it is cooked at the table and sprinkled with sesame seeds. Heat levels can be adjusted, so ask for a milder level if you prefer.

Wrap the pieces in lettuce or add rice on the side, and finish with fried rice made on the pan. The dish is rich and spicy, so water or a cold drink helps. Lines form in the evening, and reservations are through a Korean app.
