Bok-guk, a clear soup built around pufferfish, bean sprouts, watercress and a bit of radish, is something of a Busan signature, and this long-established Haeundae restaurant is among its best-known names. The clear version, called jiri, tastes clean and gently savory rather than fishy, and locals order it the morning after a night of drinking. Pufferfish carries a toxin in some organs, which is why it is prepared only by licensed cooks, so you can eat with confidence.

Rice and side dishes arrive with the pot. A spicier red broth is also offered. Prices run above a typical noodle meal, and hours may differ by day.
