Grilled hagfish is a Busan speciality that looks daunting and tastes familiar, rather like a springy, smoky grilled squid. This shop in the traditional market near the beach is one of the oldest names for it. A tray arrives with the fish already marinated in red chili paste or simply salted, then it sizzles over a charcoal grill at your table.
