Andong guksu is a regional noodle made by blending soybean flour into wheat dough, which is rolled very thin and cut into fine strands. This neighborhood shop serves it in a light, savory broth with a spoonful of seasoned sauce on top that you stir in yourself. It tastes mild and homey, so it works as a reset between the richer chicken and mackerel meals, and the perilla-seed version is thicker and nutty.
