Jinjuhoegwan is known among Seoul office workers for a seasonal dish, kongguksu, a cold noodle soup made from soybeans that tastes nutty and creamy. In summer, lines form at lunch for noodles that arrive in a pale, thick broth with ice and sliced cucumber. In cooler months the kimchi stew takes over, and it is served bubbling and spicy.

The room is plain and quick, and service is brisk. Add salt a little at a time, because the broth is meant to be seasoned at the table. English menus may be limited, but pictures help.
